Ayam Pop : The White Fried Chicken
Ayam Pop is another hot item in Minangkabau's cuisine. Talking about West Sumatera’s food, most people tend to be familiar with rendang, the caramelized beef. There are actually a lot of unique and delicious cuisines in West Sumatera, one of them is Ayam Pop. Ayam Pop is a fried chicken that has been boiled or steamed first. In a very simple way, the chicken is usually steamed by the ground species of garlic, red onion, coriander, ginger, pepper and a pinch of salt in the young coconut milk for some minutes. It can be added by lemongrass. When the chicken is tender enough, it is fried on a deep hot oil for seconds. That is why the color of this kind of fried chicken is white, not browny. It looks like a pale fried chicken. The texture is so soft. The smell is very typical, a collaboration between the smell of fresh young coconut milk and salt. Best of all, the taste is light but rich at the same time. It is savory, such a taste of hainan rice from China. It is usually served with the green chilli sauce or the red one. One piece of Ayam Pop might not be enough.
